breakfast tacos

quick breakfast idea
I think i got the idea out of one of my cooking magazines but i cant find the recipe now.

4 scrambled eggs, with some Mrs. Dash seasoning. Cook and top part of eggs on tortilla shell. Top with some shredded cheese, and salsa.

oatmeal raisin yogurt cookies

I found this recipe on the lid of my yogurt container they were really good. I took some to meanttobewed for her birthday. I put the recipe as i made it a little different from the directions

1/2C WW flour
1/2C white flour
1C old-fashioned oats
1/2C firm packed brown sugar
1 1/2tsp double acting baking powder
1/4 tsp cinnamon
1/2C raisins
1C yogurt (vanilla or strawberry)
1lrg egg
2Tbsp canola oil

1. preheat oven to 375*
2. lightly grease 1/2C muffin tins or use paper liners. In bowl stir together flour, oats, sugar, baking powder, cinnamon, and the raisins. in another bowl whisk together yogurt, egg and oil
3. Stir the yogurt mix into the flour mixture and stir the batter until it is just combined.
4. Divide the batter amoung 10 cavities and bake the muffins on the middle rack for 22-25 mintues

Yeild 10 muffins.

Strawberry Yogurt Scones


Found this recipe on cookinglight.com it is a great one for breakfast in the morning, really moist and tastey!
I did cut the recipe in half as i wanted to make sure it would turn out and they would all get eaten. Here is the whole recipe though...
Yield
12 scones (serving size: 1 scone)
Ingredients
1 1/2 cups all-purpose flour
2/3 cup whole wheat flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup diced strawberries
2/3 cup strawberry fat-free yogurt
3 tablespoons butter, melted
1/2 teaspoon grated orange rind
1 large egg white, lightly beaten
Cooking spray
2 teaspoons sugar
Preparation
Preheat oven to 400°.
Lightly spoon flours into dry measuring cups; level with a knife. Combine flours, 1/2 cup sugar, baking powder, baking soda, and salt in a large bowl. Combine strawberries, yogurt, butter, rind, and egg white; add to flour mixture, stirring just until moist.
Turn dough out onto a lightly floured surface; knead lightly 4 times with floured hands. Pat into an 8-inch circle on a baking sheet coated with cooking spray. Cut into 12 wedges, cutting into but not through dough; sprinkle with 2 teaspoons sugar. Bake at 400° for 20 minutes or until lightly browned.

German Apple Pancake




I got my new cooking light magazine in the mail the other day and right on the cover this delious looking recipe. I have to say their picture looked much better than mine but it was good..Does it really matter what it looks like if it tastes good?

I didnt have a 10 inch pan so i had to use my 12 inch pan. I'm not sure if that was a problem or not. it was very fluffy pancake but tastey. Brad said it would make a good dessert too.

Ingredients
Batter:

1/2 cup all-purpose flour (about 2 1/4 ounces)

1/2 teaspoon baking powder

1 tablespoon granulated sugar

1/8 teaspoon salt (i omitted)

1/8 teaspoon grated whole nutmeg

1 cup egg substitute (I didn't have any egg substitute, so i use 3 reg eggs, this might have caused a problem, i will try it next time with the substitute and see if it comes out different)

1 cup fat-free milk

2 tablespoons butter, melted

1 teaspoon vanilla extract

Apple mixture:

Cooking spray 1/2 cup granulated sugar, divided

1/2 teaspoon ground cinnamon

1/2 teaspoon grated whole nutmeg

1 cup thinly sliced Granny Smith apple

Remaining ingredient: 1 tablespoon powdered sugar


Preparation

1. To prepare batter, lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, baking powder, 1 tablespoon granulated sugar, salt, and 1/8 teaspoon nutmeg in a medium bowl, stirring with a whisk. Combine egg substitute, milk, butter, and vanilla in a small bowl, stirring with a whisk. Add egg substitute mixture to flour mixture, stirring with a whisk. Let stand 30 minutes.
2. Preheat oven to 425°.
3. To prepare apple mixture, coat bottom and sides of a 10-inch ovenproof skillet with cooking spray. Combine 1/4 cup granulated sugar, cinnamon, and 1/2 teaspoon nutmeg; sprinkle evenly over bottom and sides of pan. Arrange apple in an even spokelike layer in pan. Sprinkle apple with remaining 1/4 cup granulated sugar. Cook over medium heat 8 minutes or until mixture bubbles. Slowly pour batter over apple mixture.
4. Bake at 425° for 15 minutes. Reduce oven temperature to 375° (do not remove pancake from oven); bake an additional 13 minutes or until center is set. Carefully loosen pancake with a spatula. Gently slide pancake onto a serving platter. Sift powdered sugar over top. Cut into 6 wedges; serve immediately.

Southwest Scrambled egg Buritos


I had some Left overs in the Frig from Making Burritos last night so i thought i would mix it all up and make some burritos for breakfast.

1/2 lb ground turkey
3 eggs beaten
Green pepper, Chopped
Red onion, Chopped
Black Beans
Tortilla Shells

Cook turkey with the green pepper, and red onion. Add in black beans to warm them when meat is almost cooked, add in eggs too.
When finished warm up shells for a minute and put mix into tortilla shells. Add Salsa if desired.

Homemade English Muffins

We were at the grocery store one day looking at the Sodium left in English Muffins and I told Brad I would make him some so i took on the Challenge today. This is the first bread recipe i have ever made, it was so much fun and so EASY. It made like 22 english muffins. I got the recipe from Allrecipes
I used more wheat flour than white b/c i wanted them to be "Healthier" I cooked them in a PAM sprayed frying pan on med heat b/c that is all that i had and it worked perfect. took a little longer. hope you enjoy them. (Click on allrecipes to get the recipe)

Best waffles ever

One of these times i will remember to take a picture before i start eating it, but these were so good I just had to share. I got this recipe from this website and they weren't kidding!
I didn't have any buttermilk so i used plain yogurt and water mixture, and then EVOO instead of Vegetable oil, they were really good, and topped with some fresh strawberries, i think we are going to try some flavored yogurt next time and see if they taste good that way too.
Ingredients
1/2 cup AP flour
1/2 cup whole wheat flour
1 tbls sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 cup buttermilk OR 3/4 cup plain yogurt plus 1/4 cup water
1 large egg
2 tbls vegetable oil
Directions - Stir together both flours, sugar, baking powder, baking soda, cinnamon and salt in a large bowl. - Measure buttermilk or yogurt in small bowl. Add the egg and oil and beat with a fork or whisk until blended. - Add wet mixture to dry mixture and stir to form a smooth batter. Makes: 2 cups of batter (I was able to make 6 square waffles)

Breakfast Pizza



1 pkg reduced fat pizza crust

1pkg country gravy mix

3 eggs

Veggies of choice (ie...green peppers, onions..etc)

Meat of choice (ie...bacon, sausage, beef)

Pizza Blend Shredded Cheese

pre-cook pizza crust as directed

cook gravy mix as directed

scramble and cook the eggs add in veggis once eggs are cooked to heat them a little bit.

cook meat

Once Pizza crust is pre-cooked spread country gravy on pizza crust for sauce then top with eggs, veggies, and cooked meat, top with cheese, and place back in oven, until cheese it melted. Enjoy
