Chicken cordon blue


These are so much better to eat than the frozen ones, and they are so good and easy to make. hope you like them as much as we do!

Ingrediants

1 Boneless Skinless Chicken Breast for each cordon blue
1 slice of ham per cordon blue
1 slice cheese of choice per cordon blue (i used swiss this time and have used pepper jack in the past, both very good)
a few sliced mushrooms if you like them

Directions

Preheat oven to 400 degrees

Rinse chicken breast and place in ziploc bag. Pound chicken out flat, not paper thin you dont want it to dry out...
Place chicken on flat surface, what would be skin side down, Lay slice of ham on chicken, topped with slice of cheese, and a couple of sliced mushrooms in the middle of the chicken, roll chicken up and placing toothpicks to hold everything together while baking.

Place on lightly sprayed cooking pan. I think next time i will place mine in baking dish with a little bit of water covered with foil to hold moisture in to ensure it doesnt dry out.

Bake for about 45 minutes, or until chicken is cooked (not pink anymore)

I served mine with some fresh steamed broccoli and mashed potatoes with butter and parsley

Cook Spaghetti Noodles as Directed on box

Bake Chicken on 400 degrees, Coated Chicken with Ians Breadcrumbs

Pork Tenderloin Sandwhich

Ingrediants

Cubed Pork (one per sandwhich)
Ians Breadcrumbs
1 egg
small amount water
Olive Oil for frying pan


Pound Cubed pork out a little more so you have a nice sized patty
Beat Egg with little bit of water.
Coat Pork tenderloin in egg and then bread with breadcrumbs
Fry in olive oil until Cooked

Place pork tenderloin on Bun and topp with favorite sandwhich toppings.

Doggie Ice Cream



I got this recipe from a friend off thenest.com (Sorry I dont remember who it was) The dogs love them. they go bananas over them...haha


1 regular container non-fat plain or vanilla yogurt

3 TBS Peanut Butter

1 TBS honey

1 Banana
Mix all together, scoop into ice cream tray freeze overnight, and let the hounds enjoy these on a hot day or anyday.

Spinach, Mushroom, & Cheese Manicotti




Found This recipe in the Kraft Foods Magazine, and Of Course we modified it. We don't measure much when we cook so use your own judgement of what you want to taste.
1-15oz containter Part- Skim Ricotta Cheese
Spinach Fresh, chopped (May use frozen)
1 pkg Mushrooms
2 egg Whites
7 Manicotti Shells
2 C Marinara Sauce (use recipe below)
1-2C Mozzarella Cheese
Preheat oven to 350 degrees
Cook Manicotti noodles Ask Directed on Box
Spray skillet with cooking spray, cook mushrooms for 5 minutes on med heat, stirring frequently. Remove from heat. Beat Egg Whites lightly in medium bowl. Add Mushrooms, Spinach, Ricotta cheese, and Half of Mozzarella Cheese; Mix Well. Spoon mix evenly into manicotti shells.
Place manicotti into 8x8 baking dish sprayed with cooking spray. Cover with Marinara sauce
Bake 40 Minutes or until heated thru. Top with remaining cheese and continue baking for 5 minutes or until cheese melted.

Marinara Sauce

Got original recipe from Cooking Light magazine but we made changes to it, this is what we did. Enjoy! Makes about 10 cups.
3 Tbsp EVOO
2 medium onions chopped
2 teaspoons sugar
3Tbsp minced garlic
1 teaspoon salt
2 teaspoons dried basil
1 1/2 teaspoons dried thyme
1 teaspoon fresh ground black pepper
2 teaspoon parsley
1 1/2 teaspoon crushed red pepper
2Tbsp balsamic vinegar
1 can fat-free, reduced sodium Chicken broth
2 (29oz) Cans Concentrated Crushed Tomatos

Heat Oil in large dutch oven over medium heat. Add Onions to pan, cook for about 4 minutes stirring frequently. Add Sugar, and next 8 ingredients *thru red peppers. cook 1 minute, stirring constantly, Stir in Vinegar, cook 30 seconds. Add broth and tomatoes; bring to simmer cook over low heat for 55 minutes or until sauce thickens, stirring occasionally.

Toasted Cornbread, Bacon, and Chestnut Stuffing



Got this one out of the Rachael Ray Nov 07 Magazine as well. This was part of our late Christmas dinner with the grandparents too. I didn't like it but I'm not a fan of stuffing everyone else said that it was really good. There is the link to the recipe! Good Luck.

Maple-Glazed Roast Turkey with Apple Cider Gravy

I got the recipe out of rachael ray's November 2007 Magazine But I can't find the recipe on her website anymore. So if you want the recipe email me and I will scan in the recipe and email it back to you. But it was delious! It was a late Christmas Dinner the Begining of Jan b/c my Grandparents are in FL for the winter so we got together for a late holiday dinner.

Chicken Avacado Sandwhich


Got this idea from Faye-D off thenest.com but she didnt give me a recipe so just made something up.
Bake 1 Chicken breast let cool so it's easy to handle
I toasted a Kaiser Roll for DH and he wanted some long grain mustard on it
Cut up some Avacado, and Tomato, Lettece
Spread Mustard on toasted buns, Place Chicken on bottom bun, Top with Avacado, lettece and Tomato (oops I just realized I didn't put cheese on his sandwich, all well next time)
Eat and enjoy!!!

Best waffles ever

One of these times i will remember to take a picture before i start eating it, but these were so good I just had to share. I got this recipe from this website and they weren't kidding!
I didn't have any buttermilk so i used plain yogurt and water mixture, and then EVOO instead of Vegetable oil, they were really good, and topped with some fresh strawberries, i think we are going to try some flavored yogurt next time and see if they taste good that way too.
Ingredients
1/2 cup AP flour
1/2 cup whole wheat flour
1 tbls sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 cup buttermilk OR 3/4 cup plain yogurt plus 1/4 cup water
1 large egg
2 tbls vegetable oil
Directions - Stir together both flours, sugar, baking powder, baking soda, cinnamon and salt in a large bowl. - Measure buttermilk or yogurt in small bowl. Add the egg and oil and beat with a fork or whisk until blended. - Add wet mixture to dry mixture and stir to form a smooth batter. Makes: 2 cups of batter (I was able to make 6 square waffles)

DH birthday Cake


1 box Betty Crocker Lemon Cake Mix
(he changed his mind last minute so this is what he got :)
1 can cream cheese frosting
Cook cake according to box, let cool and top with frosting. It sure was delious though

Chicken Pot Pie


I got the pie crust recipe from isaacsbride off thenest.com
Single pie crust: 1 1/4 cup flour
1/4 t salt
1/3 cup cold butter
4-5 T cold water
Mix flour & salt. Cut in butter until the size of peas. With a fork mix in water 1 T at a time until right consistancy. (I use all 5 T) Roll out, bake according to pot pie directions!Enjoy!
Pre-heat oven to 400*
for the insides
2 cooked chicken breasts, cut into small chunks
2Tbsp Italian Dressing
1 can cream of chicken
Frozen mixed veggies
2 potatoes cut small (I boiled mine for a few minutes to ensure they would be cooked all the way
1 1/2C Milk
Mix all above ingrediants into small bowl. place in pie pan place crust over top. pressing down edges cut 4 small slits in the crust to allow ventilation during cooking.
Place in oven and bake until crust golden brown, let cool for 5 minutes before serving.

Blondies with Peanut M&M's

Got this recipe from all my friends on the What's for dinner Board on thenest.com!

7-8 Tbsp Butter, Melted
1C light brown sugar
1 egg
1 tsp vanilla extract
1/4 tsp salt
1 C Flour
1/4 tsp baking powder
Mix-ins of choice (see options below)

Pre-Heat oven to 350* line and 8x8 baking pan with foil and spray lightly with non-stick cooking spray

Melt butter in microwave safe bowl, allow to cool for 5 minutes. In the bowl of an electric mixer, mix the brown sugar with the melted butter, beat until smooth. Beat in the egg and then the vanilla. Add the salt, flour and baking powder, & mix until just combined. Stir in your choice of mix-ins with a wooden spoon. Pour the batter into the prepared pan and spread to level top

BAKE for 22-25 minutes or until set in the middle. Allow to cool on a wire rack before cutting into squares.


MIX-IN IDEAS
1/2-1C chocolate chips, peanut butter chips, white chocolate chipes or butterscotch chips
1/2C chopped pecans, walnuts, or almonds
1/2 C M&M's
1/2C chooped reese's peanut butter cups
1/2 C toffee pieces
1/2 tsp mint extract in addition to or in place of vanilla extract.

Crab Rangoons


We got the idea from carriannlovestimm, on thenest.com whats for dinner board. And we added some things to the recipe ourselves, these are awsome with the spinach in them!

These crab rangoons get better every time we try them. We have tried to find a way to bake them to make them a little more healthy but they just don't turn out tasting the same.
Enjoy!
8 oz pkg cream cheese
1 garlic glove , minced
1/4 tsp Worchestershire Sauce
1/2c shredded crab
30 won ton wrappers (found in Produce Section)
1 egg
1tsp water
1/4 C chopped spinach or Chives (Optional)
Oil for frying
Set cream cheese out to get to room temp. In Med bowl cream together garlic cream cheese and worchesshire sauce until smooth, stir in crabb and spinach and/or chives.
Beat the egg with water and set aside
Spoon Tbsp of mix in the center of the won ton, brush edges with egg and water mixture, fold either in half to have a triangle, or fold into a "basket" make sure edges are sealed together.
Drop 3-4 in deep fryer at a time until golden brown,
Serve with Sweet and Sour Sauce!

Chicken Stir-Fry



WE got this idea out of Betty Crocker magazine, and then made our own form of it.

2 chicken breasts, marinade in Mrs Dash salt free teriyaki sauce

2 teaspoons EVOO

1/2C Chicken Broth Reduced Sodium

1t Minced Garlic

2t Curry Powder

1/2t ginger

4t cornstartch

4 C frozen mixed stir-fry veggies

1 med red pepper cut into thin strips

in skillet heat oil over medium heat cooking chicken, cook until browned, add in veggies. cook 2 minutes

in small bowl stir together remaining ingrediants pour onto chicken and veggies, Heat to boiling; reduce heat Cover cook 3-5 minutes or until veggies are crisp-tender and chicken is no longer pink in center, Serve over Brown Rice

Cook 2 servings of brown rice as directed on package

Calzone


pre-heat oven to 400 degrees
1 pkg premade dough from grocery store, split into 3 pieces
Let dough warm about 45 minutes before trying to work with it.
roll dough out into a large circle
put pizza sauce on half of the cirle, top with topping (I used turkeyroni, mushrooms, and cheese), fold unsauced side over and pinch edges tight.
bruch with butter, sprinkle some oregano, parmasean and parsely on top, cook til golden brown,
cut and enjoy!

Breakfast Pizza



1 pkg reduced fat pizza crust

1pkg country gravy mix

3 eggs

Veggies of choice (ie...green peppers, onions..etc)

Meat of choice (ie...bacon, sausage, beef)

Pizza Blend Shredded Cheese

pre-cook pizza crust as directed

cook gravy mix as directed

scramble and cook the eggs add in veggis once eggs are cooked to heat them a little bit.

cook meat

Once Pizza crust is pre-cooked spread country gravy on pizza crust for sauce then top with eggs, veggies, and cooked meat, top with cheese, and place back in oven, until cheese it melted. Enjoy
